Whole Wheat Refrigerator Rolls
Homemade bread is always healthier and more delicious than store bought. And baking makes the house smell delicious!
This healthier whole-wheat take on the traditional dinner roll is brought to us by Healthiertalk.com reader “bolesenp.” I suggest you double-up on the recipe because these yummy rolls are sure to get eaten up fast and have them asking for more.
Ingredients:
- 2 packages yeast
- 1-cup warm (not hot!) water
- ½ cup sugar (or Xylitol)
- ½ cup olive oil (and a dash for greasing pan)
- 1 t salt
- 4 t baking powder
- ¼ t baking soda
- 2 cups buttermilk
- 6 cups whole-wheat flour (and a dash or two for working dough)
Method:
In a mixing bowl mix two packages of yeast in warm water with a fork.
Mix in the ½ cup sugar or xylitol.
Mix in ½ cup olive oil.
Mix in 1 t salt and 4 t baking powder.
In separate bowl combine ¼ t baking soda with 2 cups buttermilk and then add to yeast mixture in mixing bowl mixing well.
Mix in 6 cups whole-wheat flour mixing well.
Cover and refrigerate overnight.
Pour the dough onto a floured surface.
Add a dash of flour…just enough to make the dough pliable and not sticky.
Roll the dough out to about ½ inch thick.
Cut with biscuit cutter or small round top.
Place cut biscuits into a 9/13 pan that has been well greased with olive oil.
Let rise in a warm spot until they have doubled in size.
Bake at 425 degrees for 20 minutes or until golden brown.
