Pumpkin Mousse

“Low-calorie and low-glycemic xylitol make this my favorite Thanksgiving dessert, in place of the calorie-laden and carb-packed pumpkin pie.
It's the perfect light ending to a turkey dinner. And no worries about scheduling the oven around all the holiday dishes because it isn't cooked!”
Ingredients:
- 4 eggs
- 7 T xylitol
- 1 T unflavoured gelatin
- 1 ½ c pumpkin puree
- ¾ t cinnamon
- ½ t ground ginger
- ¼ t grated nutmeg
- 1 c whipping cream, chilled
Method:
Beat eggs and xylitol until light-coloured, thick, and mixture forms a ribbon.
Add gelatin and beat well.
Add pumpkin and spices, and mix thoroughly.
Chill until mixture begins to set.
Whip cream until soft peaks form.
Fold into pumpkin mixture.
Chill for 4 hours in individual glasses or in large bowl.
Makes: 6 – 8 servings
