Fresh Cranberry-Orange Relish
Cranberry-orange relish makes a perfect sweet and tart side dish addition to any chicken or turkey meal. And it couldn’t possibly be any easier to make. There are just three (to four) ingredients and NO cooking is involved.
- 1 package (12 ounces) of fresh cranberries, rinsed *
- 2 unpeeled sweet oranges
- 1 cup raw sugar (or whatever your preferred sweetener is), or to taste. You can stir in some orange juice in place of some of the sugar.
1. Quarter the oranges and remove seeds (keep the peel on). Drop into the food processor bowl along with the cranberries. Process until all chopped up and fairly smooth.
2. Dump orange-cranberry relish into a bowl and mix in about one quarter of the sugar (and orange juice if you wish). Taste the relish and add more sugar and/or orange juice until you get the flavor balance you want.
3. Cover and refrigerate, for at least 30 minutes before serving
* Note: If at all possible purchase organic cranberries. If you can’t find organic dunk the cranberries into a quick bath of boiling water to remove any wax and pesticides.
