Cauliflower with Peas

This fun side dish sent to us by HealthierTalk.com reader Aban K. is sure to be a hit at your next holiday gathering. Combining familiar ingredients with a few exotic surprises it’s a delicious and nutritious way to cook cauliflower with spices, seeds and coconut.

This dish is great way to sneak a little extra heart-healthy and anti-inflammatory turmeric into your diet. And an excellent way to introduce cancer-fighting cruciferous cauliflower to your holiday table.

Ingredients:

  • 2 cups cauliflower
  • 1 tsp Panch Phora ( five seed mix available in Indian shops) or you can use 1tsp cumin seeds
  • 1 pinch ajwain seeds (carrom seeds)
  • 1 small onion chopped
  • 2 green chillies
  • 1/2 tsp turmeric powder
  • 1/2 tsp chilly powder
  • 1/2 cup frozen peas
  • Pinch of pepper
  • Salt to taste
  • Peanut or veg oil
  • 1 dessertspoon (about 2 teaspoons) fresh grated coconut or 1 dessertspoon dessicated coconut
  • Method:

    In a little oil fry the onion till soft and pale golden color.

    Steam the cauliflower and cut it into small florets.

    Add a tsp of oil in the fried onions and add all the seeds.

    Let the seeds pop (Phora means to pop the seeds).

    Add the chillies and cook for 1 second.

    Add the turmeric and chilly powders and stir for 1 second.

    Add the cauliflower and peas and stir well.

    Add salt and pepper.

    Once the peas cook add the coconut mix well and serve hot with chapatti or bread.

    Tip: Don't close the lid while cooking as the peas will lose the green color.
